OLIVE SAUCE   
  Ingredients :
    9 oz (250 g) black olives, seeds removed and sliced
    1 tablespoon ají panca / sundried red aji (chili) , seeded, soaked in water an
    3 tablespoons grated parmesan cheese
    1 teaspoon fresh oregano
    ˝ onion, finely chopped
    1 garlic clove, blended
    Salt
    Pepper
    3 tablespoons olive oil

  Preparation:

Cook olives a few minutes in water to soften. Reserve.

Place ají in a medium size bowl with parmesan cheese, oregano, onion, garlic, salt and pepper. Add olive oil and combine. Add olives.If sauce is too thick, add more olive oil.
