AVOCADO MOUSSE   
  Ingredients :
    1 package (4.5 oz) unflavored gelatin
    ½ cup boiling water
    ½ cup white wine
    ¼ cup mayonnaise
    ½ cup heavy cream, whipped
    ½ teaspoons onion juice
    ½ teaspoons salt
    3 tablespoons key lime juice
    1 cup finely chopped avocado
    ½ cup finely diced celery
    1 tablespoons grated green pepper
    Salad greens
    Orange or grapefruit sections

  Preparation:

Dissolve gelatin in hot water; add wine.

Chill until slightly thickened. Beat until frothy.

Blend in mayonnaise, whipped cream, onion juice, salt and key lime juice. Fold in avocado, celery and green pepper.

Pour into lightly oiled ring mold; chill until firm.

Unmold on salad ring and garnish with fruit sections, thin slices of avocado, chopped peppers and parsley.
