CHEESE AND MANGO CHUTNEY SANDWICHES
Ingredients :
1 cup mango chutney
1 white bread loaf, no crust, horizontally cut if possible
20 slices Cheddar cheese or similar
½ cup parmesan cheese, grated
1 cup mayonnaise
Preparation:
Spread mayonnaise on one side of bread slices.
Place cheese slices on top and spread mango chutney.
Cover with another bread slice, mayonnaise facing down.
Cut as desired.
Using a small spatula or knife, spread mayonnaise along sides of sandwich. Then dip edges into grated parmesan cheese.
Transfer to a baking sheet. Before serving broil sandwiches on both sides.
Serve hot.
Yields: 40 sandwiches 2 x 1 1/2 inches
