SPINACH SANDWICHES   
  Ingredients :
    2 cups spinach, cooked and chopped
    1 loaf, whole wheat bread, cut horizontally (if possible)
    8 oz (227 g) cream cheese
    1 lb (½ k) Edam cheese or similar in slices
    ¾ cup mayonnaise
    1 tablespoon milk
    Salt
    Pepper
    Optional: Bacon, fried until crispy and chopped

  Preparation:

Soften cream cheese with milk in microwave oven.

Combine with spinach and bacon (if desired). Season.

Spread mayonnaise on one side of each bread slice. Place cheese and spinach mixture on one slice. Cover with another slice, mayonnaise side facing down.

Cut as desired.

Place sandwiches on a serving dish and cover with a damp cloth until time to serve.

Yields: 25 sandwiches 3 x 3 inches (6 x 6 cm)
