COLD TOMATO SOUP WITH GARLIC AND BASIL
Ingredients :
4 garlic cloves unpeeled
3 lb tomatoes, cut in medium size pieces
2 teaspoons balsamic vinegar
2 teaspoons Tabasco
½ cup basil leaves, rinsed, dried and chopped
Salt
Pepper
Preparation:
Roast garlic over moderate heat until skin is browned and garlic is tender, about 20 minutes. Peel garlic.
Process or blend tomatoes with garlic. Force through a fine sieve into a bowl.
Add vinegar, Tabasco, salt and pepper. Chill in the refrigerator.
Before serving, combine with basil and correct seasoning.
