HUMMUS   
  Ingredients :
    1lb 5 oz (570 g) canned chickpeas
    1 heaped tablespoon of tahini
    Juice of 2 lemons
    Salt
    Olive oil
    Paprika for garnish
    Pita or Arab bread

  Preparation:

Process or blend chickpeas with the necessary amount of chickpea water to form a thick puree.Add tahini, lemon juice and salt if necessary.

Transfer to a serving dish or bowl and pour olive oil on top.Sprinkle over with paprika.Cut bread in medium size pieces and serve with tahini.Tahini can be refrigerated for 2 or 3 days.
