TOMATO BRUSCHETTA   
  Ingredients :
    2 cups tomato, peeled, seeded and chopped
    1 ½ teaspoon capers (optional) chopped
    2 tablespoons black olives, seedless and chopped
    1 tablespoon red onion, finely chopped
    2 tablespoons basil, chopped
    2 tablespoons extra virgin olive oil
    ¼ teaspoon balsamic vinegar
    Pepper
    Salt
    10 slices ½ in. (1½ cm) thick, French bread baguette, diagonally cut and slightly toasted

  Preparation:

Combine all ingredients, except the bread. Let the mixture stand 30 to 45 minutes and drain. Top each bread slice with 1 tablespoon approximately of the tomato mixture.

Preparation Time: 15 - 20 minutes
 
        Yields 10 slices
        Calories: 65 per slice
