MATASCA   
  Ingredients :
    1 lb (˝ k) beef
    Ľ cup oil
    ˝ cup white potato, diced
    1 onion, finely chopped
    4 garlic cloves, minced
    1 tablespoon ají panca / sundried red aji (chili) paste
    1 cup beef stock
    ˝ cup peas
    1 cup corn kernels
    2 tablespoons minced mint

  Preparation:

Dice meat and brown it in hot oil. Add onion, ají and garlic. Stir well.

Add beef stock together with corn and peas. Bring to a boil for 10 minutes.

Add potatoes and continue cooking until tender.

Sprinkle with minced mint.

Serve with white rice.
