Place sweet potatoes, unpeeled in a medium pan and cover with water. Cook until tender. Remove from pan, peel and mash sweet potatoes with a potato masher or force through a fine sieve, to obtain a smooth purée.
Place sweet potato purée in a medium saucepan together with the sugar, water and orange peel. Cook, stirring constantly over medium heat until mixture thickens. Cool.
Pour into a serving bowl and sprinkle with ground cinnamon.
This Sweet Potato dessert is also used to fill yucca pastries.
Sweet Potatoes Dessert can also be shaped individually.
Shape 4 x 1.5 inches (8 x 2.5 cm) bars of Sweet Potato Dessert, on a lightly greased and floured baking pan.
Combine 1 cup confectioners sugar with ¼ cup water approximately. Brush each Sweet Potato Bar with this mixture.
Bake in preheated moderate oven, 300 °F (150 °C) for 1:30 hours until they dry. Remove from oven and cool. Remove from baking pan and keep them covered until ready to serve.
Sweet Potato Bars must be dry and sugary on the outside.
