APPLE BEIGNETS   
  Ingredients :
    Batter:
    1 cup flour
    1 teaspoon baking powder
    1 pinch of salt
    2 eggs
    2 tablespoon sugar
    2/3 cup milk
    1 teaspoon oil
    Drops of lemon juice or vanilla extract

    Filling:
    4 apples, peeled and cored, cut in 1-inch (2 cm) slices
    Sugar
    Ground cinnamon
    Vegetable oil
    Confectioners sugar

  Preparation:
Batter:
Blend all batter ingredients until well mixed. Strain if necessary.

Filling:
Place apple slices in a medium size bowl. Sprinkle sugar and ground cinnamon. Let apples stand for 1 hour.

Heat oil in a medium size skillet.

Dry apples and dip in batter one by one. Place in hot oil. Do not fry more than 4 or 5 at a time. Crowding will drop temperature and beignets will absorb too much fat. Remove when golden on both sides. Drain in paper towel.

Serve hot and sprinkle with confectioners sugar and cinnamon. Beignets can also be served with honey or syrup.

2 or 3 per serving.
