VANILLA BREAD PUDDING   
  Ingredients :
    1 cup sugar to caramelize mold
    3 ½ cups evaporated milk
    6 cups vanilla bread or any other sweet flavored bread
    6 eggs
    1 ¾ cups sugar
    ¼ cup Port wine or similar
    1 teaspoon ground cinnamon
    1 teaspoon orange or lemon peel
    4 cups melted butter
    1 teaspoon vanilla
    ½ cup raisins lightly floured, (optional)

  Preparation:

Melt sugar in a small saucepan at low heat, until golden. Caramelize a tube cake pan and set aside.

Crumble bread and place in a medium size bowl, pour milk and soak bread pressing with a fork. Add eggs, sugar, melted butter, wine, vanilla, cinnamon, raisins and orange peel. Combine thoroughly.

Pour into caramelized pan and bake in preheated moderate oven 350 °F (175 °C) for 45 minutes approximately. Remove from oven and let cool. Unmold.
