SWEET POTATO PUREE WITH CRISPY TOPPING   
  Ingredients :
    Sweet Potato:
    4 cups sweet potato purée
    ½ cup sugar
    ½ teaspoon salt
    2 eggs, slightly beaten
    3 tablespoons melted butter
    ½ cup undiluted evaporated milk
    1 teaspoon vanilla extract

    Crispy Topping:
    1 cup brown sugar
    ¼ cup melted butter
    ½ cup cake flour
    1 cup pecans, coarsely chopped

  Preparation:
Sweet Potato:
Combine all ingredients and transfer to a greased rectangular serving pan.

Crispy Topping:
Combine sugar, flour and pecans and cover sweet potato puree. Pour melted butter on top. Bake in oven at 350 °F (180 °C) until puree is hot and topping is golden and crunchy.

Serve with turkey or chicken.
