STUFFED PEPPERS
Ingredients :
4 peppers
1 tablespoon vegetable oil
1 ˝ onion, finely chopped
14 oz (400g) mushrooms, chopped
1 ˝ tomato, peeled, seeded and chopped
14 oz (400 g) ground beef
3 egg whites, cooked and chopped
4 slices mozzarella cheese
Salt
Pepper
Preparation:
Wash peppers, cut off tops and remove seeds and ribs. Cook peppers in boiling salted water for 5 minutes. Drain, dry and reserve.
Heat oil in a medium saucepan. Sauté onion until tender. Add tomatoes and mushrooms. Mix. Add ground meat and cook until liquid is evaporated. Add egg whites and season with salt and pepper.
Stuff peppers with the meat mixture, and place them on a baking pan. Place a mozzarella slice on top.
Bake at 350 °F (180 °C) until hot and mozzarella cheese is melted.
