ARTICHOKE HEARTS STUFFED WITH COTTAGE CHEESE AND YOGURT SAUCE
Ingredients :
1 ½ cup cottage or farmers cheese
1 small onion, finely shredded
Salt
Pepper
6 artichoke hearts, cooked
4 tablespoons plain yogurt
1/2 tablespoon key lime juice
4 tablespoons parsley, finely chopped
Preparation:
Combine cottage cheese with onion and 2 tablespoons parsley. Season with salt and pepper.
Divide mixture in 6 and stuff each artichoke heart.
Combine yogurt with lemon juice and the remaining parsley. Season to taste and cover artichokes with this sauce.
