CEVICHE DE CHAMPIŃONES / Mushroom Ceviche
Ingredients :
4 lb (2 k) fresh mushrooms, cleaned and sliced
3 garlic cloves, minced
1 medium size onion, julienne
1 ˝ tablespoon chopped parsley
1 ˝ tablespoon chopped cilantro
3
ají limo / chili
seeded and deveined, finely chopped
Juice of 6 to 8 key limes
Salt
Pepper
Preparation:
Combine mushrooms with garlic, onion, chili, salt, pepper, parsley and cilantro.
Pour lime juice and olive oil and combine. Correct seasoning.
Serve on lettuce leaves and garnish with a slice of chili.
