ARROZ TAPADO / Molded Rice with Meat Filling   
  Ingredients :
    2 lb (1 k) white rice
    4 garlic cloves, minced
    1 onion, finely chopped
    ½ teaspoon cumin
    1 lb (½ k) ground meat
    6 black olives, seeded and quartered
    ½ cup raisins
    3 eggs, cooked, cut in 8 wedges
    ¼ cup parsley, chopped
    ¼ cup oil
    1 teaspoon paprika


Prepare rice the usual way.

Heat oil in a large skillet. Sauté onion until tender, add garlic and cook 1 minute more. Add paprika, cumin, and pepper. Combine well and add meaat. Cook meat stirring frequently 8 to 10 minutes or until no liquid is left. Correct seasoning.

Add olives, raisins, cooked eggs and chopped parsley. Mix well.

Serve individually. Lightly oil a ramekin and fill half with rice. Spoon 2 or 3 tablespoon meat mixture on top. Top with rice and press.

Invert on dish and unmold. Sprinkle with chopped parsley on top. Can be served with french fries.
