CELERY SAUCE   
  Ingredients :
    250 g (1 cup) finely chopped onion
    250 g (1 cup) finely chopped celery
    25 g of light margarine
    25 g of flour
    150 ml (2/3 cup) of light milk
    150 ml (2/3 cup) of vegetable soup
    Salt
    Pepper

  Preparation:

Melt margarine in a skillet. Add onion and celery cooking both for 8 to 10 minutes, stirring occasionally.

Add flour and cook for one minute.
Remove from heat to add milk and chicken soup. Return to heat and cook at low heat for 3 minutes more. Season with salt and pepper.

Perfect with chicken or turkey or fish.
