RICE PEPE STYLE   
  Ingredients :
    3 cups white rice
    1 ½ cup red pepper, diced finely
    7 oz (200 g) bacon, chopped
    ½ cup fresh cilantro leaves
    ½ cup unsalted peanuts, toasted and chopped
    1 cup of corn kernels, cooked

  Preparation:

Cook rice the usual way. Cool and set aside.

Place bacon in skillet and cook until golden.

Add red pepper. Cook until tender.

Mix in peanuts and cilantro leaves.

Transfer mixture to a bigger skillet or pan.

Add rice, corn kernels and mix thoroughly with a spoon.

Serve immediately, once rice is hot.

This rice can be served with pork and meat.
