RICE WITH HERBS, APRICOTS, RAISINS AND ALMONDS
Ingredients :
3 cups rice
2 tablespoons mixed herbs
2 tablespoons olive oil
2 garlic cloves, finely chopped
¼ cup onion, finely chopped
½ cup apricots, chopped
½ cup gold raisins
½ cup black raisins
¾ cup blanched and toasted almonds or toasted pecans
4 cups chicken bouillon
Salt
Preparation:
Heat oil in a medium size pan and sauté onion and garlic until tender. Add rice, herbs and stir 3 to 4 minutes. Add boiling chicken bouillon and combine with rice. Lower heat, cover pan and let rice cook until tender.
Once rice is cooked mix with raisins, apricots and almonds or pecans.
Serve and sprinkle with parmesan cheese if desired.
