CHICKEN INCHICAPI SOUP
Ingredients :
1 chicken, cut into pieces
1 lb 2 oz (½ k) peanuts
9 oz (¼ k) corn flour
2 garlic cloves, peeled
½ cup of cilantro leaves
1.2 lb (½ k) cooked yucca (manioc, cassava), diced
Salt
Preparation:
Cook chicken in a large saucepan in 12 cups of water.
Blend peanuts, corn flour, cilantro leaves, garlic, onion with the necessary broth from the chicken.
Add the blended mixture to the chicken and bring to a boil.
When soup is almost ready add the diced yucca and mix.
