PORT VINAIGRETTE   
  Ingredients :
    2 cups Port
    ½ white onion, finely chopped
    1 cup olive oil
    3 tablespoons red wine vinegar
    Salt
    Pepper

  Preparation:

Place onion with Port in a saucepan and bring to a boil. Reduce to ½ cup. Strain and cool Port. Whisk in vinegar and olive oil. Season with salt and pepper.

Yields: 1 ½ cup
