FISH FILLETS IN ADOBO SAUCE   
  Ingredients :
    6 fish fillets (white fish), trimmed
    4 tablespoons sundried red aji paste
    ˝ cup vinegar
    2 fresh yellow ají, seeded and deveined, cut into thin julienne
    Ľ cup oil
    2 onions, cut into thin julienne
    White potatoes, cooked, peeled and cut into thick slices
    Salt
    Pepper
    Oregano
    Pinch of ground cumin

  Preparation:

Combine vinegar with ají paste in a bowl. Season with salt and pepper and place fish fillets. Marinate for 2 hours. Drain fillets and reserve marinating liquid.

Heat oil in a skillet or large saucepan, lower heat and sauté the yellow aji. Add drained fish fillets, onions and stir. Add marinating liquid, cover skillet and cook over low heat until fish is tender.
Serve with white cooked rice and cooked sliced potatoes.
