Ingredients :
    2 tablespoons olive oil
    1 medium size onion, cut into thin slices
    2 garlic cloves, minced
    3 4 tomatoes, peeled seeded, diced
    cup black olives, pitted, sliced
    cup dry white wine
    1 tablespoons fresh parsley, chopped
    4 fish fillets, cleaned


Heat oil in a large deep skillet over medium heat. Add onions and garlic and cook until soft and tender.
Stir in tomatoes, olives, parsley and wine and bring to a soft boil for 5 minutes. Season with salt and pepper.
Season fish fillets, place in the skillet and cook over low heat for approximately 6 minutes until fish is done.
Serve over white rice.
