CHICKEN SPINACH AND MANDARIN SALAD   
  Ingredients :
    Mandarin Dressing:
    2 tablespoons soy sauce
    2 tablespoons rice wine vinegar
    1 tablespoon sesame oil
    3 tablespoons vegetable oil
    1 teaspoon sugar
    Pinch of pepper
    1 teaspoon sesame seeds, toasted
    1/3 cup mandarin juice

    Salad:
    2 lb 4 oz (1 k) fresh spinach leaves, no stems, rinsed, drained and dried
    2 tablespoons sesame seeds, toasted
    1 ½ cup cooked cold chicken breast, shredded
    2 cups cherry tomatoes
    1 cup radishes sliced very thin
    ½ lb (250 g) mushrooms, sliced
    7 oz (200 g) bacon, fried and crumbled
    1 cup toasted croutons

  Preparation:
Mandarin Dressing:
Combine all ingredients in a bowl and blend well. Set aside to blend flavors.

Salad:
Place spinach in a salad bowl. Top with chicken, cherry tomatoes, radishes, mushrooms, bacon and croutons. Pour dressing and toss gently. Garnish with sesame seeds and serve.
