CHOCOLATE CREME ANGLAISE
Ingredients :
4 egg yolks
¼ lt. (1 cup milk)
¼ cup sugar
2 tablespoons cocoa, sifted
Vanilla
Preparation:
Beat yolks with sugar until lemon colored. Sift in cocoa and add boiling milk.
Continue cooking, whisking constantly, until the desired consistency is obtained. Mixture must not boil or it will curdle. To avoid this, cook it over simmering water.
