MANGO, SPINACH AND DUCK PROSCIUTTO APPETIZERS   
  Ingredients :
    1 french baguette bread cut into ½ in. slices
    2 – 3 mangoes, approximately, cut into thin slices and then chopped
    Duck prosciutto or duck musciame, chopped
    Baby spinach leaves, cut into medium size pieces
    1 tablespoon, cilantro, finely chopped
    1 fresh yellow aji (chili), seeded and deveined, chopped
    2 tablespoons of balsamic or red vinegar
    8 tablespoons extra virgin olive oil
    Chopped basil leaves
    Extra olive oil, to drizzle over

  Preparation:

Lightly brush olive oil on bread slices. Sprinkle salt and toast in a preheated oven to 300°F (150°C) until slightly toasted. Remove from the oven and reserve.
Mix duck prosciutto mango, aji or chili, and cilantro.
Season with vinegar, olive oil, salt and pepper.
Place a spinach leaf on each bread slice and spoon some of the mango and duck mixture on top. Sprinkle chopped basil leaves and drizzle olive oil on top.
