LIGHT GREEK SALAD   
  Ingredients :
    1 lettuce, handcut in medium size pieces
    1 ½ white onion, sliced thinly
    2 tomatoes, peeled, seeded and cut in medium size pieces
    5½ oz (150 g) fresh white cheese, diced
    ½ cucumber, in medium size pieces
    4 fresh mint leaves
    1 hard cooked egg, coarsely chopped
    ¼ cup olive oil
    2 teaspoons lemon juice
    Salt
    Pepper

  Preparation:

Place lettuce in a salad bowl. Place tomato, cucumber and onion slices over lettuce.Scatter cheese and egg on top.

Whisk together oil, lemon juice and salt. Combine with mint leaves.

Pour dressing over salad.
