MUSHROOM CEVICHE   
  Ingredients :
    4 lb (2 k) fresh mushrooms, cleaned and cut into thin slices
    3 garlic cloves, finely chopped
    1 medium size onion, cut into thin julienne
    1 ½ tablespoon parsley leaves, finely chopped
    1 ½ tablespoon cilantro leaves, finely chopped
    3 aji limo (chili) seeded and deveined, rinsed, finely chopped
    1 aji limo cut into thin slices for garnish
    Juice of 6 – 8 limes
    3 tablespoons olive oil
    Salt
    Pepper

  Preparation:

Combine sliced mushrooms with garlic, onion, aji limo, salt, pepper, parsley and cilantro.
Mix with lime juice and olive oil. Correct seasoning.
Serve on lettuce leaves and garnish with slices of aji limo.
