FISH FILLET WITH CILANTRO PESTO   
  Ingredients :
    Cilantro Pesto:
    2 cups cilantro leaves and stems
    1 tablespoon soy sauce
    1 teaspoon black pepper
    1 teaspoon oil
    ½ teaspoon sugar
    2 garlic cloves
    2 white fish fillets (5 oz /150 g each)

    Sauce:
    ½ cup sugar
    ¼ cup water
    ¼ cup white wine vinegar
    1 garlic clove, minced
    2 teaspoons fresh yellow aji, seeded and deveined, finely chopped
    Salt

  Preparation:
Cilantro Pesto:
Place cilantro with soy sauce, pepper, oil, sugar and garlic cloves in a food processor and process until minced.
Spread cilantro mixture onto both sides of each fillet and set aside at room temperature for 15 minutes. Heat grill to medium-high heat. Spray non-stick spray on each side of fish and place on grill. Cook about 4 – 6 minutes per side or until fish is cooked but still juicy. Serve fish with cooked white rice and the sauce.

Sauce:
Place sugar with water, vinegar, minced garlic and salt in a small saucepan over medium high heat. When sugar has dissolved, lower heat and continue cooking until mixture has the consistency of a syrup (approximately 8 – 10 minutes). Remove from the heat and stir in aji or chili.
