LIMA BEAN SALAD   
  Ingredients :
    1 lb (˝ k) lima beans
    1 large onion cut julienne
    1 ají amarillo fresco / fresh yellow aji (chili) , deveined, seeded and chop
    2 tomatoes, peeled, seeded and chopped
    1 teaspoon oregano
    1 tablespoon parsley, minced
    3 tablespoons olive oil
    1 teaspoon white vinegar
    Juice of 3 key lime
    Salt
    Pepper
    1 tablespoon minced parsley for decoration

  Preparation:

Soak beans in water the day before.

Cook beans in water until soft. Strain, Reserve.

Combine olive oil, fresh yellow aji and the rest of ingredients in a medium size bowl.

Add beans. Sprinkle minced parsley.
