ASSORTED LETTUCE AND TARRAGON SALAD   
  Ingredients :
    1/2 lb of assorted lettuce
    2 tablespoons of minced fresh tarragon
    2 tablespoons of minced fresh chives
    1 tablespoon red wine vinegar
    1 tablespoon Dijon mustard
    Salt
    ¼ cup of extra virgin olive oil

  Preparation:

Use only the most tender leaves. Tear the leaves into pieces.

Arrange lettuce in a salad bowl and sprinkle with tarragon and chives.

In a small bowl, stir together the vinegar, mustard and salt to taste until well mixed. Add oil, stirring with a fork until well blended.

Pour dressing over lettuce, toss well and serve.
