SWEET POTATOES BAKED WITH ORANGE MARMALADE
Ingredients :
4 lb (2 k) sweet potatoes cut in eighths, lengthwise (like thick french fries)
1 ½ cup orange marmalade
Salt
Preparation:
Line a baking sheet with aluminium foil and grease foil. Heat marmalade in a saucepan, to soften. Toss with sweet potatoes. Arrange sweet potatoes on the prepared pan.
Roast in preheated oven to 425ºF (220ºC) for 35 minutes, turning once during cooking, until sweet potatoes are soft and tender.
