MACA AND ZUCCHINI CAKE   
  Ingredients :
    ½ cup Maca powder
    2 eggs
    1 cup of milk
    1 cup of brown sugar
    ½ cup of applesauce
    1 teaspoon of baking soda
    1 teaspoon of vanilla extract
    1 teaspoon of baking powder
    1 teaspoon of cinnamon
    ¾ cup of raisins
    ½ teaspoon of nutmeg
    ½ cup of pecans,
    2 cups of grated zucchini (3 or 4 small)

  Preparation:

Combine Maca powder, baking soda, baking powder, cinnamon and nutmeg in a large bowl. Mix in raisins and pecans and make a well in the center.

In another bowl, beat eggs, and stir in brown sugar, applesauce.
Fold grated zucchini, mix and stir in milk and vanilla until just blended. Oil a 9 x 12 inch pan and bake for 30 – 40 minutes in a preheated oven to 350 F (180 C) or until tester inserted in the center comes out clean. Cool 10 minutes, invert onto a serving dish.
