MUSHROOM SALAD   
  Ingredients :
    1 lb (1/2 k) mushrooms, rinsed and sliced
    1 cup celery, rinsed, finly sliced
    6 tablespoons balsamic vinegar
    18 tablespoons olive oil
    2 teaspoons mustard
    1 teaspoon tarragon

  Preparation:

Make a vinaigrette by combining vigorously: vinegar, salt, mustard and tarragon. Add, while stirring, oil in a thin stream. Continue stirring until well mixed.

Before serving, combine mushrooms and celery.

Mix with vinaigrette and serve.
