BEEF CARPACCIO PARMIGIANA   
  Ingredients :
    8 oz (250 g) beef tenderloin, almost frozen, cut in paper thin slices
    1 hard boiled egg
    4 oz (100 g) parmesan cheese shavings
    ½ celery stalk, finely chopped
    2 tablespoons lime juice, approximately
    Salt
    Pepper
    ¼ cup extra virgin olive oil, approximately
    ½ teaspoon lemon rind

  Preparation:

Arrange beef slices in one layer on a serving platter. Season with salt and pepper, lime juice and olive oil. Before serving sprinkle celery, parmesan cheese shavings and lemon rind over beef slices. Garnish with hard boiled egg forced through a strainer. Season. Serve immediately.
