Prick sweet potatoes several times with a fork and bake them in the oven for 1 hour or until very soft. Remove from the oven and peel or scoop insides as soon as they are cool enough to handle. Place sweet potato into the bowl of a mixer. Beat and add gradually orange juice, melted butter, nutmeg, cinnamon, salt and pepper.
Continue beating at medium speed until purée is soft and smooth. Correct seasoning and transfer to an ovenproof serving dish.
