Melt butter with oil in a skillet and add onion and leek. Cook over medium heat until soft and tender. Remove from the heat transfer to the food processor. Add parmesan cheese and mayonnaise and process until mixture has a creamy texture. Add parsley and pulse once. Correct seasoning,
Pour mixture into 2 or 3 molds (1 cup capacity) previously lined with aluminium foil.
Bake in preheated moderate oven to 350ºF (180ºC) until set. Remove from the oven and cool.
Invert onto a serving plate and serve with toasted pita bread triangles.
