    GREEN SALAD WITH MANDARIN AND MANCHEGO CHEESE     

   Ingredients :
 
3 cups lettuce, hand cut in medium size pieces
1 cup baby spinach leaves
6 oz (150 g) baby carrots, peeled, do not remove stem
1 tablespoon butter
1 tablespoon sugar
7 oz (200 g) baby corn, cut in half crosswise, cooked
2 mandarines, separated in wedges, without pith
¾ cup cherry tomatoes
4 ½ oz (125 g) manchego cheese, shavings

Mandarin Vinaigrette:
¼ cup white vinegar
½ cup vegetable oil
1/3 cup mandarine juice
2 tablespoons honey
1 teaspoon mustard
Salt
Pepper
Thyme

   Preparation:

Combine lettuce and spinach leaves in a salad bowl. Place carrots in a medium saucepan and add water, just to cover. Add butter and sugar. Bring to a boil and lower heat. Cook until water has practically evaporated and carrots are tender. Drain carrots, cool and add to lettuce. Add corn, cherry tomatoes and mandarin wedges. Toss salad. Scatter manchego shavings on top of salad. Serve with Mandarin Vinaigrette.

Mandarin Vinaigrette:
Combine vinegar with salt, pepper, thyme and mustard. Add honey and combine. Gradually whisk in oil and mandarin juice. Correct seasoning.
